Vegetables – Shrimp Ampalaya



This Filipino vegetable dish is one of the simplest dishes one can do, plus it’s healthy to boot! Leaving the ampalaya (bitter melon) in water and salt before cooking helps temper the bitter flavors.

Shrimp Ampalaya (or sautéed bitter gourd) is a simple yet nutritious dish that you can prepare for lunch and dinner.

Ingredients of Shrimp Ampalaya:

  • 1 medium ampalaya bitter gourd, cut in half lengthwise, cored, and sliced into thin pieces
  • 8 to 10 pieces shrimp
  • 2 eggs beaten
  • 1 medium tomato cut into cubes
  • 1 small onion sliced
  • 4 cloves garlic crushed and chopped
  • 3 tablespoons cooking oil
  • Salt and pepper to taste
